Default Pinion and spur gears

Looking for a new set up. What is the differences in the number of teeth on the spur and pinion gear? What do the lower number of teeth do as compared to the more teeth on the gears?

Pinion- lower the number more torque less wheel speed, bigger number more wheel speed less torque. Spur gear- Lower the number more wheel speed, bigger number more torque less wheel speed.
