Will this work with an axle mounted servo, but still be able to keep the winch?

Yes. My servo is axle mounted (not chassis mounted) and the winch is mounted on the winch plate that comes with the stinger. The space between the winch plate and the servo horn on my setup is approx. 3/4 cm so there is plenty of clearance.
