Default servo gears

In new zealand most crawlers use Atlas hyperion high torque servos (msd20 13 kg/cm)which are programable ,i keep stripping the gears on my clod super, is it better to set the deflection more than the steering will turn and adjust EPA or turn down the torque a bit.
