Default XL-5 acts stupid when in a bind

When my truck gets in a bind, my XL-5 esc's light turns red and it acts like the battery is going dead. I have to keep reprograming it over and over. I set it to profile 1.

What batteries?
If LiPO, what mah & "C"?
What motor/motors (is it a single motor on a single ESC, dual motors on a single ESC, dual motors on dual ESC's?)

It's browning out because binding up a motor pulls a lot of amps.
