One question. If I want to use a SCX10 ii in scale competition what should I use for the dummy winch?

I assume one would have a dummy winch mounted on the front bumper then have the line go through the flairlead and winch then to the servo winch on the chassis for the actual pulling.

I have searched for winches but they are all wired for pulling

Maybe someone else can suggest what can be used for a dummy winch?
Maybe use a scale winch until it breaks, or buy one and remove the motor and give it to a friend that needs a new motor in their scale winch.

DO NOT use the powerhd 20kg servos with the wireless winch controller, they cause enough interference to mess with the winch controller.

That's a good question. Give it a try with the stock servo. See if it stays where you put it. If it tends to creep on you, then you would probably want to get a winch controller.

Also, see if it will hold something up when you aren't commanding it to turn. The winch controllers I make have an electronic brake feature. It helps to stop the winch from unwinding when it has a load on it. Of course, it can be overpowered, but it helps. Do the electronics in the 360 servos do that too? I really don't know.
