Default brushless turns

how do you do the math to convert kv to how many turns the motor is?

You don't really, there is no formula that does that. Best you can do is fine charts from motor companies to get you in the ballpark at best. KV is a very deceptive rating by itself, one I wish never made it into the RC Car world.....it kinda arrived with brushless and has since stayed around....even though its a terrible way to gauge a motor.
