Firts off, I've searched and not found anything helpful, so... My 2 sons are wanting to get new rc trucks. One wants a fast truck while the other would like to build a crawler. What my thinking is, get the one a Stampede and the other a Wheelie King. The Pede mentions using a 7 cell. Could a guy also use a 7 cell in the WK and share the packs between the 2 trucks?

Absolutely, its only 8.4v compared to 7.2v. Now much more then that on a stock ESC can start to cause problems. But you wont have any issues as I run a 7 cell in my WK with the stock ESC everyday.

Yes. I ran 7-cells on my WK all the time. I actually ran mine on the stock ESC with 7 cells, higher than stock gearing and a 20t motor. the ESC eventually got hot and shut down but when it did it on regular gearing I had no problems.

you'll need to get a higher turn motor if you don't want to worry about the ESC shutting down. I used a 7 cell with my stock electronics for about a week before the overheating problem got too annoying, so I bought a 55T motor and never looked back. Now, I have the rx and esc in a semi sealed plastic box, a 7 cell 1800mAh battery and it hasn't overheated once.

What battery configuration were you running? I didn't think a 7 cell would fit in the stock holder.
