Default Sidewinder esc and 5700 motor or Traxxas vxl 3s esc with brushless motor?

Which one? I'd want the traxxas since it's waterproof. It's gonna be used in a E-maxx.

I want one that has speed and torque.

You need more than the Velineon for an E-Maxx. i would recomend a Mamba Monster 2200kv combo

What about the Sidewinder with the CS 5700 kv motor?

The e-maxx is to heavy for that size motor. If you ran 2 of either one of them it would work great.

Are you going to use the E-Maxx for crawling or speed? Either one should be ok for crawling with a tiny pinion and giant spur. For speed you'll need to kick it up to a HV ESC and motor...
