| stainless steel chassis?
stainless steel chassis is this good material to construct my chassis or should i get the regular 6061 aluminum

Steel is going to be heavier, but you may be able to use thinner material to cut down on the weight if you wanted. Steel accepts bending a little more easily (aluminum can tend to crack or break), but will be tougher to drill. Try searching a bit - I am pretty sure I saw someone make a chassis out of some stainless plate.

If you do it right it should work, but as previously stated it will be HEAVY if you don't get rid of excess material.
