This is just what I've heard... There is a pin that limits the travel in a servo. Take that pin out ( I believe its on the gears inside the servo) and you can use your 3rd channel to use that servo for a winch. Hope this helps.

Your close, there is a pin on the main gear that the horn attaches too, there is also a plastic insert on the underside of the same gear that keeps the servo centered on the pot. take that out as well. On top of these two things you must also plug the servo in and make sure it is centered so the gears do no move trying to find center, once the pot is centered and not moving, drop come glue on the pot. Replace the gear and close the case, then check to make sure it functions as a winch. It really is pretty simple and Im sure there are some build threads floating around with photos of the how too.

But this should help.

Stupid question but what is the benefit of a servo winch vs let's say a 3r winch?

There are benefits to both, but specifically the servo winch does not have an external controller, can be waterproofed easily, and with a hitec 645 or anything with higher torque will be much stronger then a 3 r winch and will last a lot longer. I think though that is in direct relation to one another, there is less torque so it wears out faster.
And really the only advantage to a 3 r winch or something like it is the way it looks.
