Default multiple channels - what to do with them all?

I have a Grauper MC12 on its way.

i will have 2 on/off/on switches, one dial, and one momentary on switch. I can add more to this later if i choose to.

I'm driving the Unimog and as of right now the only options i have on here are lights, and a winch.

the lights i plan on adding more, so one on/off/on will be: UP = lights on, MIDDLE = off, DOWN = lights on + aux lighting

winch is in/off/out, or i may put it on the dial to control the winding speed.

momentary on switch i may find a horn function.

any other thoughts?

install a wireless camera with pan and tilt
that should take up at least 2 more channels

waiting on my source in Germany to get a 2nd receiver and crystal in so I can use it on 2 models.

turn signals...spot light, use two dial for rotate up and down, then rotate left and right...that would be cool.

lock and unlock front diffs, two speed tranny....
