Hi

ESC specs usually list motor limit for 540 motors. Can all these ESCs also handle 550 motors? And if so, is there a change in turn limit?

I'm considering running a 550 motor on my Axial AE-2 ESC, if possible. :)

turn limits for ESC's are only guidance really.
ESC will run a 550 no bother as i had a 12t 550 running on my AE-2 with 2s just keep an eye on temps.

There's enough variance between MFG's where it doesn't really matter. A cheap 550 can may pull less power than a rebuildable race 540 if the number of turns is equal. The problem is that 550 motors don't really have a set length (550 is used as a generic term in the *hobby* world) - a 70mm long can will have a lot more armature & magnet than a 55mm long 550.
