Basically I just would like to know how different gearing can put stress and strain on a motor. That way I can work out for myself what gearing to choose in the future.

Me . I'm using 14t Pinion with 54t Spur 32pitch on a 8.5t 4000kv motor..

Higher top speed = more stress on motor (and esc, and battery)

Lower top speed = less stress on motor.

You want to check motor heat, if you can't hold your finger on the motor for five seconds you need to gear down.

gear down the pinion or spur or both?

Either a smaller pinion or a larger spur will work. I would start with the pinion as they are usually easier to source.
