I just received a set of the Vanquish 1.9 wheels for my birthday. Unfortunately I did not realize that you also need the adapter hubs and they come in many sizes (depth offset). The Vanquish websites show several options that increase by 1/8" increments, but does not say which is required for the SCX 10.3. Does anyone know which are required? Also, do the hubs come with the screws to mount the wheel to the hub?

Apparently, they use 4-40 screws which are NOT included. You can buy standard socket head screws at your local hardware store, or order on line.

This is the actual VP set but you will need 2 sets.

You can also go with the LockedUp set of Acorn studs

Check the package your wheels came in. They should come with the hardware for mounting to the SLW hubs.
You don’t necessarily have to buy the VP SLWs either. There are several vendors that sell SLW compatible hubs. Plenty of choices come up if you do a search on RPP.
 
You should probably upgrade the wheel hex to a stepped hex. The SLW hubs fit better on stepped hexes, and the axle nut is less likely to come loose while your running it. They also come in different widths, i run 6mm Stepped hexes on all my crawlers.
