Default Carnitas for dinner

Found this recipe the other day and decided to give it a whirl today.

1 pork shoulder
1 can chipotle peppers in adobo sauce
1 can salsa verde
1 large onion

-Put pork shoulder in dutch oven
-Take half the can of chipotle peppers remove the seeds, and dice, then smear on top of pork.
-Dice onion and place on top of pork.
-Pour can of salsa verde on top.
-Place in oven at 350 for 3.5-4 hours.

I would be tempted to add some lime juice and chopped garlic.

Chipotle peppers are roasted jalapeno peppers, and adobo is a sauce made from ancho chilies. Salsa verde is a salsa made with tomatios.

Unless you have a Mexican or South American grocery store over there, they might be hard to find. You could probably do something similar with some more "local" ingredients. Try searching online for the ingredients. The tomatios have a sweet acidic taste like green tomatoes, and the chipotle peppers have a smokey flavor, not particularly hot like jalapenos.

I was hoping this was going to be about Carnage Asada, but that still looks damned good.

Maybe try to make some gravy or whatever with the sludge and some water/beer/Coke Zero on the bottom?

Top it with some Bruno's peppers.
