I know we all like to eat, I've seen the bellies of a lot of you crawlers out there:afro:

I Have a cook book going on another forum and thought I'd start it here too!

I'm no Chef but I can make some good food and like to share, so here you go a few of my favorite dinner's and snacks. Nothing super fancy but really tasty

Cajun BBQ meatloaf-

1# ground Beef, your choice of %
1 small onion chopped
1 green bell pepper diced
1 red bell pepper diced
2 slices of whole wheat bread cubed
1/2 cup milk or until bread is evenly moistened
1/4 teaspoon Cajun seasoning
1 Egg
2 Tbs olive oil
1 cup of spicy BBQ sauce (Jack Daniels spicy)

Preheat oven to 350* Line a rimmed Baking sheet with foil, cover with nonstick spray

Pour Milk over diced bread until evenly soaked, in a large bowl let soak for 10 minutes

heat oil in nonstick pan over med/high heat add onion and peppers and cook stirring occasionally until tender, transfer to a plate and let cool.

Add onion mixture to beef, egg and seasoning to bread mixture and blend by hand until just mixxed

Transfer mixture to baking sheet and form into 4x9 inch loaf and coat with BBQ sauce

Bake for 1 hour let stand 5 minutes before slicing serves 4-6
 
Buffalo Chicken Pizza-

2 boxes of Jiffy pizza crust or similar
2-3 Large skinless, boneless chicken breasts
Franks Buffalo wing sauce Med or Big bottle
1 cup of vegetable oil
1 1lb bag Mozzarella cheese or your favorite cheese blend

Prepare dough to Boxes Specs

While you wait for your dough to rest slice chicken breast to bite sized chunks and fry in a sauce pan with vegetable oil until thoroughly cooked and with a slight crispy exterior. Pour enough Franks Buffalo sauce into a large ziptop bag (about 1/4 cup) to evenly coat cooked chicken pieces and shake away until coated.

Pour the enough of the remaining Buffalo sauce over the pizza crust to act like a marinara and evenly distribute the chicken on the crust and cover with your cheese.

Bake according to pizza crust instructions and serve with a bowl of Blue cheese or ranch dressing and some celery sticks!
 
I freaking love cooking... I'm a stress cooker/baker... I love to bake things, then give them away, haha.
a couple of my favorites:
Herbed Green Beans

1 lb green beans
2 tsp olive oil
3 large thinly sliced shallots
½ tsp sugar
½ tsp salt
¼ tsp pepper
¼ tsp tarragon
2 tsp grated lemon zest
¼ cup thinly sliced basil leaves

Bring ½ inch of water to boil in 10-inch covered nonstick skillet. Add green beans; simmer, covered over medium-low heat until tender-crisp, about 8 minutes. Drain in colander.
Heat oil in skillet over medium heat. Add shallots and sugar; cook until softened and golden, about 2 minutes. Add green beans, salt, pepper, tarragon. Cook, stirring until heated through, about 2 minutes. Remove skillet from heat and stir in lemon zest and basil.

2 eggs
1 c. sour cream
1 tsp. vanilla
2 c flour
1 ¼ t baking powder
¼ tsp. salt

Grease tube pan layer ½ batter and sprinkle w/ brown sugar and cinnamon, layer remaining batter, and top w/ brown sugar and cinnamon.
Bake @ 350 for 1 hr, cool 30 minutes, sprinkle with powdered sugar.

best easy lamb chops

this is dead easy and bangin. for the bbq

lamb forequarter chops are the best for this.

-rosemary
-olive oil
-oyster sauce
-salt
-pepper

cover both sides of all chops with light salt/pepper according
to taste. chop up your rosemary quite finely, and mix in a small
bowl with the oyster sauce. (if you want any other flavours add them)
really doesnt need anything else.(i actually add some oil to this mix) cover your chops in the oyster/rosemary mix rather well.

you can let them sit for a while in the marinade but its not needed.
when you cook them cook them right through. well done. all of them.
they will go black and look burnt but thats the flavour.

when you add the oil is up to you, i just dont put it on a hot plate coz
the meat can taste bitter. even if you dont like oyster sauce you should love this. my own recipe.

Killer Teriyaki marinade

1 Cup Soy Sauce
1 Cup vegetable oil
4 Tbsp. Molasses (Dark)
3 tsp. ground mustard
3 tsp. ground ginger
4-6 garlic cloves, finely chopped. (not whole cloves, just the pieces off the clove.


Mix together, and add, Beef or chicken, Let sit for 2-3 hours in sealed container. Then grill!! AWESOME!!!
 
Fast and delicious...

Grilled Chili-Cheese Fry Buffalo Strip green Burrito

1 burrito sized flour tortilla
1 can of your favorite chili
2 tyson buffalo strips
1 hand full of french fries
some cheese
your favorite green hot sauce

Heat french fries and buffalo strips in oven according to package instructions
heat chili
place chili, fries, buffalo strips, cheese and green sauce in warm tortilla and grill in frying pan until tortilla is crispy

ENJOY!!!!
 
Worlds BEST and most calories ALFREDO"thumbsup"

Ingredients
1/2 cup sweet butter
2 garlic cloves, minced
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1 (12 ounce) box angel hair pasta
Directions

Melt butter in medium saucepan over medium/low heat.

Add the garlic, cream, white pepper and bring mixture to a simmer.

Stir often.

Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.

When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.

While the sauce cooks, boil noodles for 3-5 minutes.

Place pasta on serving plates and spoon sauce over pasta.
 
toasted chicken cheese mayo sandwich-

get a whole roast chicken from the shop
and a descent deli style sandwich maker
that doesnt squash the bread.

i keep the chicken in the fridge and can go
nuts on toasted sangers for a couple of days.

preparation is pretty self explanatory.

just incase- you just strip the chicken as
needed, cheese can be cut or grated
it melts anyway. dont get to carried away with the
mayo or cheese, it gets hot and drips.
i dont think i need to explain how to put
things in a sandwich.

good for lunch or supper. or dinner :cry: lol.
 
This is one we like to do when camping on the Beach...

Very Simple...

40oz Bottle of Corona
Greek Seasoning
Shrimp

Take some Alumn Foil and rap a pound or so of Shrimp into a nice ball with the Alumn Foil. Add your Seasoning and Corona. Let that sit for a while. Not sure on the time. Never kept. take.. To busy finishing off the rest of the Corona... We always by Shrimp from those trucks off the side of the road...Leaving here in the Midwest we don't see much real freash Shrimp.
 
Ribs...

Full Rack of Ribs..

Take some and run the Pappys in real good. Rap in Alumn foil and set in the fridge over night.

Pre-heat Oven 360
Place a Baking pan with some water in the bottom, and place the Ribs still in the foil in it. While it's baking. Keep an eye on the water. Don't let it dry out.

Bake for 2-3hrs.

Get your Favorite BBQ sauce and get the grill ready..

Once you pull them out if the Oven. Get your self a Brush and place the Ribs only on the Grill. Start brushing on your BBQ Sauce. Keep flipping them and adding more BBQ Sauce. The meat should be falling off the bone. Only have them on the grill for 20-30min. The time keep flipping and adding the BBQ Sauce...

Thats it..
 
No Problem.. This stuff...

I use this stuff all the time!! Take 4 or 5 large taters, 1 stick of butter, one white onion all cubed... generously coat with the greek seasoning. Then wrap in three or four layers of heavy foil and toss on the top rack of the grill while you cook everything else. (times may differ due to size of tater chunks) usually 45 min or till potatoes are done. Soooooo goooood!!
I got plenty more when I get home tonight."thumbsup"
 
Chili Dogs

1 can of favorite Chili
2 Hotdogs
2 Hotdog buns
Shredded Cheese
Chopped Onions

Heat can of chili
Boil hot dogs in water
When dogs are cooked place them in the hotdog buns.
Pour the whole pan of chili over the hot dogs in the buns
Top with shredded cheese and onion

Serve with a cold beer
 
Cardiac Punch, 2, two liters of cherry 7-UP, 1 two liter of Code Red Mtn Dew, 3-4 cans of Monster (green) and some ice.

Cpn Morgan to taste if you're feeling LUCKY!
