Deans is 100% okay, but I would recommend two 4mm castle bullet connectors. You need to insulate them with shrink tubing of course.
But deans is how I ran for years, until last year.

Yep. Put the female connector on the ESC and male on the motor.

X2 on the 4mm bullets

the deans plug will only work if its a brushed motor since it only supports a positive and negative wire. Brushless motors use 3 wires and deans plug won't do.

Default Is there a way to solder the motor directly to the esc?

Since the motor is on the skid plate and the esc mounts to the body. Is there a way to do this beside bullet connectors? Anyone try another way?

Your gonna want to keep some kind of connector on the motor and esc. Trust me. It will make it the biggest pain to get to stuff with it solid.

Why create two threads with the same question? This section doesn't need clutter. I'm combining the threads.
