Can we make it a rule where when something is sold that you edit your thread/title as sold but leave the price? I find myself looking at recently sold items to try to help gauge prices on identical items I am contemplating selling but everyone removes the price and inserts sold in its place...kinda frustrating.

Post the price that you feel is fair, or what you absolutely need to get out of the item. Make sure to figure your shipping and post the product. If someone wants it, they'll buy it.

I know that's not an answer to the question you asked, but many times price is a moving target as things either gain or lose value.

People seemingly remove prices for privacy of deal.

Mostly I believe people remove the price because no matter how many times the word SOLD is typed out in an ad, if the price remains, for some odd reason people get blind and completely ignore the SOLD words throughout the post and still contact the seller with attempts to buy or out-pay the actual current buyer.

No, a rule to force members to keep pricing after things sell will not be put in place.
