A XS Lipo means X elements in serial
one element = 3.7V
So a 2S lipo has a voltage of 7.4V and a 3S lipo has a voltage of 11.1V

The advantage depends on what you want. More voltage means more motor speed, but check that both your ESC and motor can handle 11.1V continuous, and 12.6V peak.

in simple terms the more S you have the more power and in turn the more power equals broken parts!!!

some esc's can only 2s lipos and alot of them can handle 2-3s lipos
