Depends.

You can run on one pack, with one ESC.
Two packs on one ESC.
One pack on two ESC's.
Two packs on two ESC's.

All depends on what you want.

I run dual Mamba Max's on one battery pack. I use this, which makes it nice and compact to hook everything up (compared to making your own...)

For once, (probably the first and last time) I agree with M175ForLife. Get yourself a MOPED ESC, it's cheap but somewhat tempermental.

Yes, you can run one battery.

Ugh... The MSC is such a waste of time as it'll bleed more energy and get SUPER hot at crawling speed 'cos it dumps the power not used thru the resistors while the motors are running...

The MoPed is a good choice as is the Mamba Max... But for a budget, the MoPed is good bang for buck...

Don't know about bang, but it'll definately sizzle eventually.

Here you go... http://www2.towerhobbies.com/cgi-bin/wti0001p?&I=LXGZX1&P=7

It was mentioned before. Not a bad ESC, far better than the mecanical POS.
