Default Brushless setup for a pede...

Alright, I'm going to save up and bite the bullett and go brushless for my pede. Currently have the XL-5/15x2 speedgem combo. Works great, but the maintenance is going to kill me in the long run. I want something fast, tough, and cool running! I would also prefer something with a waterproof ESC. Looking on the pede forums, I've seen people saying to go with something around a 5800 with 7-8 cells, rather than a 7700 with 6 cells. but no one gave a good reason. This is going to be a basher, fun in the sand/mud/track kinda rig. I figure I will basically be building this from the ground up, as I couldn't stand downtime from my pede! Pushing serious power, and with my heavy trigger finger, I figure I will end up getting the aluminum trans, metal gears, making most of the pieces out of aluminum, you get the idea. Any thoughts on the motor/ESC would be great! Thank you for your time!
