Default cutting rims?

Will someone clue me in on the purpose of cutting the outer rim off the wheels on a clod? Is it just to make the tire mash out more flat when pressure is applied and thus giving more surface area = more grip? I think this is the reason, but ... I've been wrong before!
It seems if this were the case then cutting them both off would make good sense too, but you would have to be very accurate with your tire glue job... ?? please help!

I cut both outer sections off the rim. Doing so will force some of the tread to wrap around onto the sidewall, it also tucks the rim further inside the tire to avoid the rim catching as much on the rocks. I don't think it would help with the tire flattening out any more.

I also did it for the same resons as Unruley. I also wanted more rome to mount my links as far out as possible.
