I see some people talking about them, adding them to their ESC's, but what does it do, and how do you know when to add one?

It overrides your SC in providing power to your servo(s). Many ESC's internal BEC's that provide less than 5apm. You can program a castle BEC up to 10amps. Increasing amerage to a hich torque servo will maximize performance and prevent overloads on the ESC. Generally speaking, scalers do not tend to need them, comp crawlers with digs do.

BEC stands for battery elimination circuit. This circuit powers the servos and Rx. its basiscally used in situations where one would not have the space to mount a rx pack or is trying to save weight in a particular setup.
