Smoking a Fattie

I was surfing the BBQ Brethren forum and decided to try smoking a fattie.
Fatties - The BBQ BRETHREN FORUMS.
I started with this pile...

Loaded up the sausage with onion,peppers and cheese.

Then rolled it up tight with bacon and put it in the smoker at around 225F.

Here's a shot about an hour in to it,can't wait for it to get done!

It started raining and cooled things off a bit,I thought it would be done by now.It smells like the county fair in my back yard!

I was glad to see that the cheese wasn't running out of it.
 
nicely done but ya got to learn to weave yer bacon "thumbsup" ....i did my first one last year, it had shrimp, provolone cheese and bacon inside it....wrapped with applewood smoked bacon....

one thing i found it easy to do is use zip-loc bag for your ground meat to shape it to fit your bacon weave....

stick your fillings on it and use wax paper or smooth side of butcher paper to roll it tight....

don't remember how long it took but i took it to temp for pork to be safe to eat....

this thing came out great for my first edible fatty :lmao: ....best thing is to try everything you think you would like in one bundle, you can never run out of ideas "thumbsup" .......bob

It turned out great! I am looking forward to trying different things with this in the future.

And to bob1961,yours looks awesome but I just didn't want that much bacon on mine.
