You may get about an hour of runtime, of course all depending on how you drive.

If you really scale drive with it, maybe close to an hour and a half.

Best thing is to try it out. Charge one up, bring a stopwatch and time your runtimes.

Would it be ok or wise to run two of these batteries in parallel?

Shouldn't hurt anything. I've run parallel-wired batteries on many things.

It might be more beneficial/simpler to just get a higher mah battery than to mount 2 lower mah batteries.

You can run the parallel batteries and have 2 smaller batteries flanking the frame rails. Can actually help with CG and balance of a rig.

I will toss a 5000mah 2s in every once in a while and can usually trail till I am ready to pack it up on one pack.

Good point. I didn't even think about the smaller batteries. I've never had any.

I run two 2cell 5000s in parallel on my stomper. I get 4-5 hours depending on how hard i run it.
And i also run a 2cell 8000 on my TF2. I have yet to hit the low cut off with 2 -2 1/2 hour runs on that one.

Ditto here with a 5000 mah 2s 40c Lipo. We usually run 3-ish hours, and I rarely have to swap a pack on it. I would recommend that over 2 packs for simplicity.

I use to run 1 battery. But i did some changes and spot were battery use to be don't work anymore for me.
On top of that my truck is top heavy. So I ended up putting battery's on my sliders to lower the CG a bit and picked up
some extra run time.
