Default Gearing question

I have the timbuk2 13.5 in mine and I left the stock gearing and it wasn't that fast in high gear, so I replaced the 28 tooth pinion with one I had left for my on road cars it was a 37 tooth it's way better speed wise just not sure if I should go with like a 30-34 tooth and a smaller spur

The main reason I need to regear is the cover doesn't fit over the 37

that seems like a big step up for the pinion. Make sure your motor isn't overheating now!! The best way is to have a new spur and pinion that match your needs!! Someone else will probably have better answer on that!!
