I'm looking to run a winch, and lights.
Headlights, light bar, and rock lights (I'd like each on their own channel to run independent but still be able to run all at once of I want)
Possibly a dual winch setup eventually but what's listed above is all for now.
Is this simple to setup?

For the lights, you would just pick a switch on the TX, and make it (more than likely) a 2 position switch to turn the lights on & off.
What else do you have in your electrical system? I had a similar issue with a cheap winch controller and the power up delays of certain devices. Basically either the rx would power up too early or late, never could figure it out. But I did fix it by using the power from the device that I was having issues with.
Try powering your rx only from the brxl and everything else (if any) directly from the bec.
If your speaking of my issue, I'm running a HeyOK winch controller. I'm running the BEC to the RX at 6v. Identical setup to what I have in my sons honcho. His truck is also running a 3b, but with none of the throttle issues.
