Default HH 27T gearing?

What is a good place to start on gearing using a holmes torquemaster 27T combo? Using 2 and 3s.

I would start out with a 5:1 gear ratio. That would be around 80/16 or 87/17 using 48p gears or 56/11 using 32p gears.
