Indeed... different strokes/ different folks lol. I think I've just had so many bland burgers throughout my life that when I got into cooking, I wanted generous amounts of flavor. On the flip side, I've had very modestly seasoned burgers ( salt & pepper) that blew me away... proof that much of it is the cut of meat, fat percentage, and preparation. Just seems that most beef I find in the stores these days is pretty tasteless.

Chicken Ramen: I've never had authentic ramen, so I have no reference as to what this should taste like. However, I will say it is probably one of the tastiest soups I have ever made. There are flavors coming from all directions on this. Ginger, garlic, soy, a little kick from the rice vinegar, the fat from the chicken, etc all sitting in perfect balance. We have a really good Asian market a few blocks away, so I was able to source as many of the ingredients from there as possible (I have never seen so many types of "fish sauce" before ). On a side note, those are Fresno peppers from my garden floating in there. They were "early fruit", so I wasn't expecting much from them, flavor-wise. When I tried a slice, I basically got punched in the face with "HI!!! I'M A FRESNO PEPPER!!!". I had read that they were slightly hotter than a jalapeno, but that certainly caught me off guard. | Re: Food/Cooking I like to keep mine simple as well. Salt & pepper, then top with bacon, cheese and jalapeno slices. Sometimes I will also top with a fried egg. I have pretty much stopped ordering burgers at restaurants. I am weary of these mile-high slop-fests that you can barely pick up, let alone get your mouth around. And, if you do manage to pick it up, you end up wearing half the toppings, as they get ejected out the back when you bite into it. In the rare instance I do get a burger, it is a fork & knife affair. |

It it November?! Homemade clam chowder and homemade bread: That is boar bacon floating in there, as well. I find it has a better flavor than regular bacon and is less greasy, too. I get it from a store a few towns over that sells all kinds of game meat: The Healthy Buffalo |

It's pouring rain up here in NH, so no crawling today. However, I was able to hit the garden before it started raining. It turns out I had enough peppers to make a 16 oz. jar of pickled hot peppers: It is a medley of Jalapeno, Fresno and Cherry peppers. |

Bison back ribs: Flavor-wise, the smoke was excellent. I need to fine tune my rub as it was a little too peppery. The internal flavor was delicious. The only gripe I had was that the surface was pretty dry. I'm not sure if I over-cooked them or if I need to brine these, as they don't have nearly the fat of a pork rib. I was spritzing them pretty regularly, but that didn't help. More pickled goodness: (L-R) The peppers I showed earlier, two jars of garlic & dill slices, two jars of bread & butter. |

This is where I get the bison from: The Healthy Buffalo I feel lucky that I have 4-5 decent sources for meat in a 25 minute drive that aren't the supermarket. Having said that, I have never had any major issues with Hannaford's (my grocery store) meat. I have a bunch of tomatoes to pick and more peppers, so it is going to be a busy weekend. |

skinnyj, when you smoke do you keep pans of water in the smoker also? If not, try it, and keep them about 2/3 filled up until you're done. Bison prime rib is one of the best things I've ever had. I know why they were almost hunted to extinction, because they're so damned delicious! |
