Tonight, with cold gusty winds temps dropping into the lower 20's... it was the perfect time for some homemade potato soup:

Yukon Gold potatoes, roasted garlic, white onion, peas, carrots, sweet corn, celery, extra-sharp cheddar, smoked cheddar, Mediterranean cheddar, butter, sour cream, evaporated milk, chicken stock, salt, pepper, dill, parsley, etc... topped off with shredded sharp cheddar, bacon, and sweet onion.

A Salmon fillet from Moms ( health/wholesome grocery store chain. Sorta like a Trader Joes), left over rice reheated in a bit of Thai soup base and a can of private label grocery store green beans. Not too shabby, all in all.

Three way pizza (ignore my fat finger that got in the picture):

Left to right:

Red onion, jalapeno, meatball, ham, pepperoni, cheese, red suace - Me

Chicken, bacon, cheese, BBQ sauce - my little one

Caramelized onion, bacon, cheese, pineapple , BBQ sauce - Wife

I'm going to have to experiment with this, as the crust was a little "doughy" for my liking. I'll try cranking the heat to 500+ and letting it stay that way for 15-20 min and then put the pizza in on the lowest rack and turn the oven off, as the radiant heat should cook it. This is the same way I cook my eye of round roasts.

Got a new toy today! Lodge 7 quart dutch oven. I have 8 and 4 quart dutch ovens but they are both enameled. This one is going to be my go-to fry machine (yeah, I know... Really healthy... ) I have fried in my others, but with this one, I don't have to worry about killing the enamel if it gets too hot.

I'm breaking it in tonight with fried chicken sandwiches and tomorrow will be wings, onion rings and shrimp!

Here is the chicken. It was pretty good, but could have been a little more crunchy...

Had a sweet tooth last night, so I made healthy (well, as much as can be) banana bread. So this morning, I used that, and did banana bread french toast with thick cut applewood bacon. Pretty good way to start a rainy Sunday if you ask me.

Yep, me too, it's one of my favorite semi healthy treats. Mmmmm, the walnuts I'll have to try that.
