It supposed to be "greek" and healthy and I like the thought of grilled meat and veggies(think kebobs) over some couscous or jasmine rice.

I love tatziki! Never used it for more than a dip or Gyro sauce tho. I may look into another source of marinade for my chicken and lamb to add some moisture then brush the tatziki on the kebobs before I mix them in the rice

I got hooked on good meatloaf a few years ago and started working on perfecting it (IMHO). Made it today for 12, this is about the 5th run with the extended family so it has now been excepted to go into a New Cook Book series from Sheila Simmons and the Great American Publishers. Here it is: Old-Fashioned Meat Loaf Total Time: 1 hr 10 min Prep: 15 min Cook: 1 hr Preheat oven to 375 degrees F. Yield: 4 servings Ingredients 1/2 pound ground beef 1/2 pound ground venison 1 teaspoons salt 1/3 teaspoon ground black pepper 1/2 cup finely chopped onion 1/2 cup finely chopped yellow bell pepper 1 egg, lightly beaten 8 ounces canned diced tomatoes with juice 1/4 cup quick-cooking oats Topping: 1/2 cup ketchup 3 tablespoons brown sugar 1 tablespoon prepared mustard Directions Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf. Bake for 40 mins at 375 Topping: Mix ingredients for topping and spread on loaf. Bake for an additional 10 mins at 400 or until internal temperature is 160 to 165. Let stand 15 mins. To increase servings you can double or quadruple. Cooking time will increase to about 90 mins for a quadrupled recipe. I've been making these everyday for about a week. Fried egg, vintage cheddar with black pepper, spinach, avocado and hot English mustard on rye bread. Washed down with a bullet of- ice,filtered water, grapes, cucumber,spinach and sometimes either banana or avocado or plain yogurt. Going from eating shit or nothing at all to basically living on this feels like i'm on meth (energy etc). Cut down on the drinking which helps. |
